Coconut and Lime Sponge Cake (GF)

Gluten-free (GF), Refined-Sugar-Free Base, Vegan

A moist coconut & lime gluten free sponge made from milled premium Australian almond, buckwheat, tapioca, rice, corn, besan, quinoa and flaxseed. 

Topped with a tangy icing with fresh lime juice, and generous sprinkles of lime zest  and toasted coconut flakes.

This cake uses rapadura (unrefined sugar) in the base sponge.

Simply delightful, this cake has been used by many as their wedding or dinner party cake.

All our GF sponge cakes are made with a large proportion of almond flour, not cheaper GF substitutes, hence the increased body and lighter texture.  We make our cakes from scratch having spent a number of years perfecting our proprietary GF ratios without the use of synthetic additives.
